We love watermelon so searching on Pinterest for some Recipes with this tasteful fruit when we discovered this Watermelon and Goat Cheese salad that seens perfect to do in a very hot summer day. The recipe is from Ingradients.Inc and it’s very fresh, easy and healthy. I make it at home it substituting the Goat Cheese for Feta Cheese and I must say it was delicious!

Watermelon and Goat Cheese Arugula Salad

Prep: 10 minutes
Yield: 4 to 6 servings
Ingredients
6 cups fresh arugula
2 cups cubed watermelon
1 cup blueberries
1/2 cup whole walnuts, toasted
1/2 cup crumbled goat cheese
1Balsamic Vinegar and olive oil
1Salt and pepper
Preparation
1. In a large mixing bowl, combine arugula, watermelon and blueberries. Sprinkle walnuts and  goat cheese over the top and toss gently. Drizzle with vinegar and oil; season with salt and pepper.
Serve immediately.
